Bikini Recipe

Makes enough for 10 servings

To make the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (makes 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Cordial: Put the listed items inside a pot, bring to a simmer, agitating to dissolve. After that, take off the stove and leave to cool down completely. Transfer into a sealable bottle, close it and refrigerate it in the refrigerator, where it will keep for about four weeks.

For the Batch Mix: Mix all the liquid ingredients in a big jug, leave to sit for an hour, then filter it best through a fine cloth, so it's perfectly clear.

When ready to serve: Add 85ml from the premix into your mixing glass containing ice, and agitate carefully for about 60 seconds to chill. Pour into an frosted cocktail glass or equivalent, garnish with a few cranberries and complete it with a quick spritz of the essential oil over the drink.
